Rain's Thursday Art and Dinner Date - Bakery and Cauliflower Bake

Can you believe it is already August!  Slow down, summer.

Welcome to Rain's Thursday Art and Dinner Date's Bakery theme!  This is my bakery piece an ACEO (2 1/2" x 3 1/2") in watercolour pencil.

For the Dinner Date, this is my cauliflower bake with tomato and cheese.  It is very hearty and delicious.  Here is the recipe I used for the most part.

1 28 oz can crushed tomatoes

3 tbs olive oil

2 cloves garlic

1/2 tsp chili powder optional

1/2 tsp salt

1/2 tsp pepper

1 cauliflower cut into florets

2/3 c shredded cheese

1 bay leaf

1/2 c breadcrumbs

Make the sauce

Saute garlic in olive oil, add chili, bay leaf, can of tomatoes.  Simmer 30 mins.

Assemble bake tray

Add sauce to the bottom of the bake tray lined with parchment paper.

Add half the cauliflower.

Add half the breadcrumbs

Add half the cheese

Now add half the sauce

Repeat with the rest of the cauliflower, sauce, cheese, breadcrumbs in that order.

 bake 425F 30 min.

Martinis

Daughter L made us these martinis from a mix she received as a gift.  They were so good, with lots of ice, some watermelon, and strawberries in a blender.  She dipped the edges in sugar and salt.  This is not the drink for diabetics but husband M had a small glass.

Big Mac Tacos

I had a package of tortillas and decided to make some Big Mac Tacos using this Instagram video.

They were quick, easy and delicious!

Sunday Smiles - Tzatziki

I made a quick Tzatziki mix using this link.  It was great with crackers.  I didn't grate the cucumbers, just chopped them finely and lightly squeezed them  out in a paper towel.

Roses

These are some roses from daughter L's garden.  The previous owner left a wonderful garden behind.   They do their best to maintain it. The photo was taken last month, the flowers have done so well with all the rain this summer.
