It’s an energetic and eclectic gourmet comfort food restaurant. It’s a relaxing neighborhood craft beer bar. It’s a genuinely all-inclusive gathering place that welcomes everyone: tats and suits, moms and rockers, locals and visitors. It’s a melting pot and meeting spot for all!
Melt Bar and Grilled was born from Cleveland musician and chef Matt Fish’s love of two things: great craft beer and the grilled cheese sandwich. Matt’s vision was to bring classic American dishes to the table in an unpretentious and fun way because everyone can relate to a grilled cheese sandwich!
The answer to “What is Melt?” isn’t just bread, cheese, craft beer, music, and atmosphere, it’s the chemistry of it all – the way it comes together- that makes Melt unique. It’s a certain magic that can’t easily be explained, it must be experienced. Wherever you are, and whoever you are, there’s a Melt Bar and Grilled experience waiting for you.
How far back does Melt history go? Like grilled cheese itself, it goes back to childhood.
As a kid, Melt owner and founder Matt Fish loved the simplicity of the gooey, melty grilled cheese sandwich.
But Matt wasn’t like the other kids – he wanted to open his own restaurant.
The seeds of Melt were planted – he just didn’t realize it yet.
It’s 1992 and Matt gets his first restaurant job in his hometown of Parma, OH.
“A light bulb went on, the stars aligned, and I said, this is it. But I want to do my own thing.”
Matt hustles to achieve his dream, working at area restaurants, and earning a degree in Culinary Arts.
In 2006, Matt opens Melt Bar and Grilled in Lakewood, OH.
Word spreads about the little punk rock craft beer bar serving mind-blowing grilled cheese sandwiches.
Foodie shows Man vs. Food and Diners, Drive-Ins and Dives film episodes at Melt.
The Melt universe goes supernova… as does the line to get in!
The Melt wait becomes “legendary,” and Matt knows it is time to expand.
In 2010, the second location opens in Cleveland Heights. (RIP)
Each new location has the same vibe as the original – John G’s posters, Jake Kelly’s murals, the delightfully tacky decorations, and the merry holiday blow molds.
Melt has stayed true to its roots of delivering an unforgettable experience– serving gourmet comfort food and the best craft beer available.
