Top chef Adam Handling is opening a countryside pub in Cornwall this summer. The chef said his second Cornish venue would offer "the best of both worlds" alongside his Ugly Butterfly restaurant at Carbis Bay Hotel.

The Tartan Fox will be in the Grade II-listed former Carvynick House, which dates from the 1600s, in Summercourt, between Newquay and Truro. Formerly the Fox's Revenge pub, it is being refurbished into a "stunning, quintessentially British countryside pub", complete with roaring fireplaces and cosy snug areas. It will seat 90 diners across two floors, including the bar, wine room, restaurant and two private dining rooms, with additional restaurant seating upstairs.

It will be the chef's second pub opening following the launch of award-winning The Loch & the Tyne in Old Windsor in 2021. Like Ugly Butterfly, all produce used at the pub will be locally sourced - with a plan to use vegetables, herbs, and flowers grown in its garden.

Adam - who cooked for world leaders when the G7 summit came to Cornwall in 2021 - said: “I’ve always loved Cornwall so, when this opportunity came up, it was one I just couldn’t refuse. The pub is completely stunning, steeped in history, set in the Cornish countryside with so much land. Cornwall is one of the most beautiful places in Britain and it produces some incredible ingredients.

"It’s amazing to have the chance to combine the history of this stunning building with sustainable British food, made from local Cornish ingredients. You might not know you're in an Adam Handling restaurant when you walk in but you'll know it by the time you walk out.

"Cornwall is such a popular holiday destination, as well as a home to so many wonderful locals, and it’s an absolute dream to be able to have two venues here. We’re expanding the Adam Handling experience for Cornish residents and for anyone further afield, you can fly into Newquay, visit us at The Tartan Fox in the countryside and then head over to Ugly Butterfly down by the coast. It’s the best of both worlds."

Firepits are being installed outdoors so the pub's outdoor seating can be used all year round. The Barn at The Tartan Fox will be another space for extra seating and can also be hired for weddings and parties.

The chef said The Tartan Fox's menu will be similar to sister pub, The Loch & the Tyne, which has a Michelin Bib Gourmand and 3 AA rosettes - but using ingredients from in and around Cornwall. Options will range from more casual snacks and pub classics to "signature Adam Handling dishes", with a "touch of Scottish influence".

The Tartan Fox is due to open on June 4.
